X is for Xmas Snails

Inspired by these gorgeous cookies over on Sprinkle Bakes we decided to make our own Christmas Spiral cookies.

We used the same foundation biscuit recipe as for Tinkerbell's Christmas Slippers and doubled the quantities so we could tint one batch red and keep the other white. We also blitzed some candy canes in the hand held blender to sandwich in between the red and white layers.

Once we had rolled out the biscuit doughs to roughly equal sizes, Bee sprinkled the candy cane crumbs on to the red dough and I placed the white dough on top. We then pressed the two layers together and rolled it up into a sausage from the longer side. Then all we had to do was slice the roll up into 1 cm slices, place them on a lined baking tray and bake at 160 for 8 to 10 minutes.

If you wanted to you could shape the biscuits into rounder shapes but we decided to leave them as they were - hence the 'snails'.

We re-rolled the leftovers to make marbled Christmas cookies.
