Rainbow Muffins

Rain, rain go away come again another day, week or month. It is still raining here so I thought I would get Bear and Bee to help me make some colourful rainbow muffins to help cheer us all up. however, as any body who has cooked with children will know things don't always go to plan. Neither of them were interested in helping me cook these. I couldn't even entice them into helping put the smarties on top. Never mind. We did all enjoy eating them and perhaps you will have more success with your child.

Makes 12

Ingredients
2 1/2 cups SR Flour
1/4 cup cocoa
3/4 cup brown sugar
1 cup milk
1 egg, lightly beaten
1/2 cup vegetable oil
1/2 cup smarties, or other candy coated chocolate buttons

Method
1. Preheat oven to 190 degrees Celsius.
2. Line a muffins tray with paper cases.
3. Sift the flour into a large bowl and stir in cocoa and sugar.
4. In a small bowl or jug, mix the milk, egg and oil.
5. Add the milk mix to the flour mix and stir until just combined.
6. Spoon the muffin mix evenly into the muffin cases.
7. Arrange 4 or 5 smarties on top of each muffin in a curve to resemble a rainbow.

8. Bake for 20 minutes.
