M is for Moroccan Lamb Tarts for The Kids Cook Monday

Flicking through an Australian food magazine I came across an article on making meals that can be adapted for adults and children.  I have seen these types of articles before but have never really been keen on the recipes used.  This one is different however.  There are four recipes that use the same base ingredients and even the same first steps but then they alter slightly to suit the tastes of either adults or children.  I thought they would be great to try out for The Kids Cook Monday.

Moroccan lamb tarts and sausage rolls

The recipe we chose for tonight was for Moroccan Lamb Tarts (for hubby and me) and Lamb Sausage Rolls (for Bear and Bee). I adapted the recipe slightly from the original to suit what we had available.  At the moment it has been pouring rain for much of the last 3 days and it is set to continue for the next few.  Thus my plans of using fresh mint and parsley from the garden were dashed.  However the end result still tasted great even without the fresh herbs.  I am sure the next time we make this recipe adding the fresh herbs will make it even tastier.

Serves 2 adults and 2 children

Ingredients
400g lamb mince
1/2 medium brown onion, finely chopped
1 egg, lightly beaten
2 tablespoons fresh wholemeal breadcrumbs
1/2 small carrot, grated
2 tablespoons grated tasty cheese
1 tablespoon Moroccan seasoning
2 sheets frozen puff pastry, partially thawed
2 tablespoons slivered almonds
1 orange, segmented and juice kept
30g baby spinach and rocket mix
1/4 red capsicum, finely sliced
1 tablespoon extra virgin olive oil

Method
1. Preheat the oven to 200 degrees celcius (fan-forced) and line two baking trays with non-stick baking paper.

2. Mix the mince, onion, egg and breadcrumbs in a bowl.

3. Place half the mix into another bowl and add in the carrot and cheese. Mix well.

Finally Bear came to help.
4.  To the first bowl add the seasoning and mix well.
5. Cut both of the pastry sheets into 4 even squares each.

6.  Take one of the squares and place 1/4 of the mince/carrot mixture along one side.

7. Roll up to enclose the filling.
8.  Place seam side down on the baking tray and repeat with the another 3 pastry squares and the remainder of the mince/carrot mixture.
9. Bake for 25 minutes.

10.  Meanwhile, fold the side of the other 4 squares over to form a border.

Success! The first time Bee has ever touched raw mince.
11.  Place 1/4 of the moroccan mince mixture on each of the pastry squares.

12.  Spread evenly and top with the almonds.

13. Place the tarts on the baking tray and bake for 20 minutes.

14. Serve the Moroccan Lamb Tarts and Lamb Sausage Rolls with  a salad made from the spinach leaves, capsicum, orange segments and orange juice/oil combined.
