I spotted this recipe for Home Made Corn Chips on the Stay at Home Mum website and knew we had to give it a go.  Bee loves corn chips but I don’t like the high salt content and additives that many of the store bought ones have.  Since hubby is away tonight we decided to pair them with a cheesy dip and some vegetable sticks for a simple dinner.  

These would also be lovely with guacamole, homemade salsa or made into nachos. You might like to change up the flavours a little too. Next time we will try mixing in some finely grated parmesan cheese but you might like to add a little garlic powder or Mexican chilli powder or even some finely chopped herbs.

Be warned - these chips are very moreish when they are still warm from the oven!

Home Made Corn Chips and Cheesy Dip
Makes 90 chips approximately and 1 1/2 cups dip

Ingredients
For Chips
1 cup Polenta
2/3 cup plain flour
½ teaspoon salt
1 teaspoon baking powder
¼ cup olive oil
½ cup cold water
Additional salt for seasoning (we used less than ¼ teaspoon)

For Dip
30g butter
¾ cup (185g) sour cream
2 cups (250g) grated tasty or cheddar cheese

Method
For Chips
1. Preheat oven to 200 degrees Celsius.

2. Combine the polenta, flour, salt and baking powder in a bowl and add the olive oil and water.

 3. Mix well.

4. Divide the mixture in half and roll each half out separately between two sheets of baking paper until very thin (1mm).

Re roll the dough to work in the salt

5. Remove top sheet of paper and sprinkle the flat mixture with the extra salt, replace baking paper and again roll gently to incorporate.

Then on the diagonal the other way to form triangles
6. Remove top sheet of paper and carefully cut into triangles.

 7. Place on baking tray and bake for 15 minutes or until crisp.

For Cheesy Dip
NB. As cooking this dip requires using the stove, I made it myself as Bear and Bee aren't ready to work on the stove yet.
1. Melt the butter in a small pan over low heat.
2. Add the sour cream and stir until warm.
3. Add the cheese and keep stirring until it has melted and the mixture is smooth.
4. Serve warm.
