This Tortilla Pie recipe has been a favourite of ours for years now. Every time we make it we change the ingredients slightly depending on what we have on the pantry but this is the basic recipe we use. Even though the ingredients are essentially the same as burritos it is nice to present them in a different way.
Tortilla Pie
Serves 4 (large serves)

Ingredients
1/2 tablespoon vegetable oil
400g beef mince
35g packet taco seasoning mix
1 can (400g) red kidney beans or Mexican chilli beans, drained
4 tortillas
2 cups (250g) grated Cheddar cheese
300g Mexican tomato salsa, store bought is fine
150g sour cream
extra salsa, guacamole and tomato salad to serve
Directions
1. Preheat oven to 180 degrees Celsius and grease a 23cm pie dish.
2. Heat the oil in a large non-stick frying pan and cook the mince for 5 minutes, or until brown.
3. Add the seasoning mix and cook for 5 minutes.
4. Stir in the beans.
5. Lay a tortilla in the base of the pie dish and spoon on about 1/3 of the mince.
6. Sprinkle with 1/2 cup of cheese and a little of the salsa.
7. Repeat the layers with the remaining mince, cheese and salsa. End with a tortilla sprinkled with cheese.
8. Bake for 20 minutes or until cheese is melted and golden brown on top.
9. Allow to cool slightly before cutting in wedges.
10. Top wedges with a dollop of sour cream. And serve with extra salsa, guacamole and tomato salad.
