I first came across this great recipe for Herb and Cheese Quick Bread when I desperately searching for a bread to accompany our pasta dish. I had forgotten to get the dough ready for focaccia and needed something quick. We have made this bread a few times now and it is so easy to change up the flavours. It is also very easy for kids to help make as it doesn't involve any waiting. Bee helped me make this version for dinner tonight.
Quick Cheesy Bread

Ingredients
2 cups plain flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup butter, melted
1 cup shredded tasty cheese

1/2 cup yoghurt
1/2 cup milk

1 teaspoon sea salt

Method
1. Preheat oven to 180°C.
2. Grease a 20cm round or square pan.
3. Combine flour, sugar, baking powder and baking soda in a large mixing bowl.
4. Combine melted butter, cheese, egg, yoghurt and milk, and add to other ingredients.
5. Mix well.
6. Tip into pan and spread evenly and sprinkle with coarse sea salt.
7. Bake at for 30-45 minutes, or until a knife inserted in the centre comes out clean.
A great accompaniment to pasta and soup or just on its own warm from the oven.
