With the school holidays in Queensland over and the kids back at school there is time to reflect on how our holiday time together went. We are fortunate that hubby works in education so we are able to spend the school holidays doing things as a family. I feel we did just the right amount of planned activities these holidays. Sometimes we are so busy with long road trips to visit family, playdates, catchups, excursions etc that we need a holiday to recover from the holidays. I bet you know that feeling right!
The one activity that we all really enjoyed was camping. So much so that Bear (my homebody) declared in the car on the way home that she wasn't ready to go home yet! A momentous declaration for her. We only had to travel 90 minutes north to get to the campground and both Bear and Bee had a ball.
The campground organised activities for the school holidays based around the theme of Chocolate. Yes, chocolate! They had chocolate cooking classes, chocolate themed movies screening on an outdoor movie screen, chocolate scavenger hunts and chocolate breakfasts (only a little bit of chocolate for these thank goodness).

We signed up for the Chocolate Crackles cooking class which both girls enjoyed. The recipe that was used contained copha. If you would rather not use copha or don't have it on hand Childhood 101 has this great recipe for Deliciously Simple Chocolate Crackles.
We were going to do the Chocolate Pizza cooking class too but we ran out of time. Rachel Ray has this recipe for Over The Top Homemade Chocolate Pizza which is perfect for the kids to do the next time you have a family pizza night.
And we missed the Chocolate Chip Pancakes for breakfast. They were on the morning we arrived. So I promised Bear and Bee we would make Chocolate Chip Pancakes when we got home.

I have a family favourite recipe for Pancakes that we use a lot. Which I have just realised while writing this we haven't posted yet. I will be adding it very soon. Just to try something different this time I adapted a pancake recipe from one of my Donna Hay magazines for these Chocolate Chip Pancakes. Next time though we will probably go back to our usual recipe.
Chocolate Chip Pancakes Adapted from Donna Hay Kids Annual 6, 2009

Makes 8
Ingredients
2 cups self raising flour
1/2 cup caster sugar
3 eggs
30g butter, melted
1 cup milk
1 teaspoon vanilla extract
3/4 cup chocolate chips
extra butter for greasing pan
Directions
1. Mix flour and sugar together in a large bowl.

3. Stir until combined.
Mixing the pancake batter. |
4. Allow mixture to stand for 10 minutes.
5. Heat a large non-stick frying pan over medium heat.
6. Grease lightly with a little of the extra butter.
7. Place large spoonfuls of pancake batter in frying pan.
8. When bubbles start to appear on the surface, flip the pancakes over and cook until golden brown.
9. Remove cooked pancakes and place on a plate.
10. Repeat with the rest of the batter.
