F is for Food Revolution Day

We're joining in with Jamie Oliver's Food Revolution Day on Friday 16th May 2014. Getting kids excited about cooking is one of this blog's main aims.

Bear, Bee and myself will be making the Super Smoothies and the Banana Bread for morning tea.  And I think we will have the Classic Tomato Spaghetti and the Simple Green Salad for dinner.

M is for Menu Plan Week 1

Menu Plan Week #1

This is our menu plan for the coming week. Each week I will link to previous posts for the meals if Bear, Bee and I have cooked them together before.  If they are new recipes or not ones that are suitable for kids to help with I will just include a link to a recipe card for my own recipe or a recipe I have used from another trusted site.  I plan to eventually build up a bank of our own tried and true recipes from the threefootcooks household.

Monday night Bear and Bee will help make the meatballs for dinner.
 
Sunday          Dinner – Homemade Pizzas
Monday         Dinner – Chinese Meatballs and Noodles (Kids cooking night. I will write a separate post about this after we have cooked it together)
Tuesday         Dinner – Chicken, Bacon and Rice Bake
Wednesday    Dinner – Roast Lamb and Vegetables
Thursday       Dinner – Sausages, Mashed Potato and Steamed Vegetables
Friday            Dinner – Fish and Chips
Saturday        Dinner – Tacos

Baking this week – Chocolate Chip Biscuits and Muffins

Morning and Afternoon Teas include – Yoghurt, Biscuits, Fruit, Crackers and Cheese, Muffins, Pikelets, Cupcakes, Muesli Bars and Sandwiches.

Lunches include – Meat and salad rolls, Meatball and salad wraps (using leftover meatballs from Monday night), Sandwiches, Pasta and Sausage Salad (using leftover sausages from Thursday night), Fish Finger and salad wraps and Hamburgers.

R is for Recipe Cards

I have to apologise for being a little lax with keeping the threefootcooks blog up to date lately.  I put it down to a post Christmas/turning 40 slump.  I have been busy organising the menu plan for the next few months (finally done!), and preparing for hubby to go back to work after his summer break (he is also starting more post graduate study this year so that should make things even busier as a family).

Bee has been pestering me to take her to ‘ballerina school’ so I have enrolled her and Bear in tiny tots dance classes starting the end of this month – I can’t wait to see them dressed up in their leotards and skirts.

Anyway back to the blog – while we have still been cooking and blogging as part of The Kids Cook Monday campaign we haven’t done much else in the way of shared food preparation.  I do have lots of plans for the upcoming year though!  One thing I have been wanting to work on, is making the blog more user friendly.  I will be creating cooking and food related printables that will be available each month to download for free. 

And I realised recently that I need to make the threefootcooks recipes easier to use if you want to try them with your child.  So I did some research and found out how to create printable recipe cards.  All of the new posts containing recipes will feature a printable recipe card in pdf format and I will be going back and updating past posts over the next few months, to include cards with them.

If you have any suggestions for things you would like us to cook here at threefootcooks let me know and I will endeavour to include them.

C is for Cupcakes



With the weather overcast and our spirits (and energy levels) needing a lift after a busy weekend, I decided we should have a tea party.  Bear and bee could help me make pink cupcakes – everyone’s favourite.  And to make it a little bit more special we crafted some placemats out of pink checked paper napkins, stickers and laminating sheets.  I got the idea for this craft from the No time for flashcards website which is a great source of activities, games, crafts etc. to do at home with your children.

For the cupcakes, we used this recipe:
Yoghurt Cupcakes
3 cups self-raising flour, sifted
½ cup caster sugar
1 cup strawberry yoghurt
1 cup vegetable oil
3 eggs

Preheat oven to 180oC. Line two 12-hole muffin trays with paper cases.
Place flour and sugar into a large bowl and mix well.

  Add yoghurt mix to flour mix and stir well to combine.

Spoon mixture evenly among cases.
Bake in oven for 15-20 minutes, until cakes are golden brown and spring back when touched lightly in the centres.
Cool cakes in trays for 5 minutes before transferring to a wire rack to cool completely.

To make icing, combine 1 ½ cups sifted icing sugar or icing mixture with 1 tablespoon melted butter and 1-2 tablespoon boiling water. Stir until smooth and mix in a few drops of pink food colouring.

This recipe is enough to make 24 cupcakes, so I usually halve the icing recipe, ice 12 of the cakes and freeze the other 12 for later.

You could use other flavours of yoghurt and team them with different coloured icings, perhaps blueberry yoghurt and purple icing, banana yoghurt and yellow icing or fruit salad yoghurt and orange icing.

M is for Muffins


Muffins are a great recipe for children to help you with or even, if they are old enough, to complete on their own – at least up to the stage where they need to go in the oven.

If you start with a basic muffin recipe like this one from the Stay at home mum website you can make them any flavour you and your child likes. And if you omit the sugar you can make savoury ones too.

Our current favourites in the three foot cooks household are Raspberry and white chocolate and Banana.  There are a lot of flavour combinations that can be used with this basic recipe.  I have listed some at the end of this post but feel free to experiment and find one that works for your little cook.   

So today I thought we would try something different – for our family anyway. 

Apple, Banana  and Cinnamon Muffins
Basic Muffin Recipe
    2 cups Self Raising Flour
    1/2 cup sugar
    1 egg, beaten
    1/4 cup vegetable oil
    1 cup milk
To make apple, banana and cinnamon muffins, add 1 ripe banana, mashed, ½ cup apple, grated or pureed and ½ tsp cinnamon.

Here’s how we made them:


Preheat the oven to 175oC. Prepare a 12 hole muffin tray by greasing tray or lining with paper cases.

Mix the flour and sugar together in a large bowl.

Measuring dry ingredients is a good skill for children to practise
 Lightly beat the egg and then add to flour mix along with oil and milk.

 Gently mix in your chosen flavourings - in our case the pureed apple, mashed banana and cinnamon.

 Spoon the mix into the muffin tray.  As you can see from the photos we experimented with a spoon and a 1/4 cup measure for filling the tray with mix.  Even though the 1/4 cup measure was messy it got the job done quickly.  The spoon takes longer and needs to be refilled a lot more often.

The number of muffins this makes will depend on what flavourings and how much of them you add.  This variation made 14 standard size muffins.  Plain vanilla mix will make 12 muffins.

Bee loved these muffins so much that she had 2 for dessert. They are also delicious served warm with vanilla ice cream and maple syrup.

Flavour ideas:
Blueberry – add ½ cup fresh or frozen blueberries
Choc Chip – add ½ cup milk or dark chocolate chips
Chocolate – ¼ cup cocoa, mix into the flour before adding
Vanilla – 1tsp vanilla extract
Jam filled – 1tsp vanilla extract added to basic mix, fill muffin cases, add 1 tsp strawberry jam and push down slightly into mix with end of spoon
Muesli – 2 tbs honey and 1 cup toasted muesli (you may need to add a little extra milk or orange juice so the mix is not too dry)
Pizza – ham, grated cheese and chopped pineapple
Tomato and corn – 1 cup frozen corn kernels, ½ cup tomato salsa, 1/3 cup grated cheese
Pumpkin – Leave out the milk and add 300g pumpkin, cooked, mashed and cooled, 1 cup grated cheese
